Time came up for my favourite raspberry, because I received a wonderful mould from Pavoni, purchased from @pastrymarket.sk I filled the insert with raspberry confit, raspberry panna cotta and finally soaked it in elderflower yoghurt honey mousse. Final cap was an almond financier. I also tried to spray the dessert with colored neutral glaze as wonderfully instructed recipe and process by @dinarakasko . The colour is from PAVONI - ABSOLUTE cherry red . The mould name PAVONI LAMPONE. My cake nuage with fresh strawberries from czech farm @farma_vranany_hanc in amazing mold nuage @pavonitalia. Thid cake was made to celebrate our 8th marriage anniversary. It was my first attempt to cover it with neutral glaze made from gelatine. Allthough it went fine, because of the air its colour turned out white. My presentation of Pure Perou for St Valentine’s Day. I was lucky to get the Alto El Sol Chocolate. Thing which made me happy, that for the first time I rolled the sable to just 1.5 mm thickness and baked it without any cracks! While doing this dessert I struggled with creating the original stencil for decoration. My plotter didnt want to cut the stencil from acetate sheet and the guitar sheet was too soft. Therefore instead of PURE PEROU Sign I made Heart from another Stencil I purchased last year while being to Barcelona. What I learned in this class? Its possible to make cremeux so creamy and with shiny texture, just from 4 ingredients in less than 10 minutes? YES! It's possible to use fresh homemade pineapple juice and gel it with gelatine? If you know how, yes it is! Is it possible to make mousse just from chocolate and cream without gelatine mass, that holds after defrosting? Yes. As christmas come closer, the time to prepare homemade eggnog made me think of prepare the czech traditipnal dessert called "The Peak / Spitze / Špička". To be able to freeze the very sweet eggnog for filling with alcohol content and hold the GEL mould shape from @pavonitalia after defreezing I included some gelatine in the filling. The great two parts #pavoni Sphere mould made it simple to pour the eggnog inside without leaking and make the perfectly round insert for the gel mould. The 70% dark chocolate from @callebautchocolate mousse based on anglaise and italian meringue made perfect match. The biscuit with hazelnut butter and hazelnut flour made the perfect final match. The shape made it very easy to glaze with 811 Callebaut Mirrorglaze at the end. My name is Mája and maybe you also know the famous bee Maja story about a blonde little bee, who wants to try everything and live every day of her life. I was lucky to collect all the tools, mould and special ingredients to reproduce the original recipe from @yannbrys from his very inspiring book Tourbillon for my birthday. The colour was chosen to match with my wonderful birthday hyndrangea flower. The mould is called Pearl from @dinarakaskomoulds. The filling had 3 layers vanilla cream, mango yuzu confit, milk and dark chocolate cremeux and milk mousse with tint of hazelnut made of delicate @valrhona jivara and carraibe chocolate. Absolutely gorgeous was the trocadero biscuit from hazelnut butter, honey, whipped eggwhites with sugar and almond and hazelnut flour! I followed also a wonderful tutorial on chocolate mould casting from @kirstentibballs to make my first chocolate shells for the decoration in tritan mould. My favourite mousse from pistachio paste is from Bachour in Color book, simply pistachio paste chocolate, whipped cream and gelatine... how amazing this tastes  how great it fills also intricate moulds, it holds its shape very well. Absolutely gorgeous chocolate entremet. Slightly adjusted recipe from @koestlichkeitenvonmaren. Absolutely gorgeous dark chocolate cremeux with rosmarin, sark chocolate mousse, dark chocolate sponge cake and combination of confit prom orange and apricot puree (since my children dont like taste of orange peel which is included in oroginal recipe). My first attempt to bake crunchy tuille butterflies. Sunday coffee time was great time to enjoy a piece of this cake.

There is nothing like pushing your limits out of the comfort zone. I am loving pistachios, their natural taste and colours! From the times when Pistachio Ice Cream was just green coloured ice cream to todays possibilities of getting the true green pistachios even the fine pistachio paste from the local store. This time I wanted to compare two mousses / one from Bachour in Color book,  cooked milk and cream, poured over the gelatine mass, white chocolate @valrhona with pistachio paste and mixed with semiwhipped cream/ and /one from Kristen Tibbals in online pastry courses where you mix pistachio paste with semiwhipped cream and add it to pate a bombe mixed with gelatine mass / both mousses are very delicious. First mousse is fluid and will easily fill the structured moulds and the second is rich and sets quite quickly, therefore more suitable for smooth moulds like #silikomartmould #universo... pistachio goes very well with cherries and rapberries, I wanted to taste unusual combination of pistachio and pineaple. The recipe is from Kirsten Tibbals and her #savourschool.com.au . The primary pistacchio color of #mirrorglaze was poured over the entremet and added two secondary colours of pale yellow and dark green over it. Final design was made by blowing the air from spray gun to the glaze. On Monday we celebrate namesday for all girls named Marie. It's also my name. My mum gave it to me! It was the name of my great grand mother. But as I was a child no one has ever called me other than Madlenko... therefore for our family meeting I decided to bake madeleines with blueberries and lavender. 4 tips to make the perfect madeleines. 1) Make the dough one day ahead. 2)Mix the ROOM TEMPERATURE eggs with sugar and melt the butter (in the case you are not using oil) Mix a little bit of eggs mixture with the melted butter before you add it to the eggs-sugar whisked mixture. 3) Mix the flour with baking powder in a bowl before adding it finally to the egg sugar fat mixture. 4) Store the dough overnight in the fridge covered with cling film in an airtight container. In the morning fill the moulds and put it directly to hot oven. The right shape will appear. If you have silicone mould you can fill it with a thin layer of tempered chocolate and press cold madeleines into it. The amazing Romance Mould from Pavoni was in my heart since the first moment I saw it in the picture. Red miraculous flower which can make every moment special! This time I used the method of amazing Amaury Guichon to make the inserts Exactly Round Made a blackberry raspberry cremeaux inside of Mull3d 28 lollipop mould from #silikomartprofessional and then insert it twice in a halfspheremould of 4cm in diameter. Perfectly round insert then putted inside of the yoghurt mousse and covered with blackberry madeleine biscuit.
